Recipe of the Week: Yuca con Mojo

About: Yuca is a root vegetable that is widely used throughout the Caribbean. Also known as cassava, yucca can be used in soups, in stews, as a side dish or even enjoyed alone such as this recipe.


Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Yields: 6-8 servings



  • 1 ½ lbs. yuca, peeled, halved and cut into chunks
  • Juice from 1lime
  • Mojo marinade.


  1. In a large pot add the yuca with enough water to cover the yuca. Include the lime juice and salt. Bring to a boil, reduce heat and cover until yucca is cooked. This should take about 30 minutes. Drain water
  2. Pour mojo marinade on yuca. Serve immediately.
