About: Yuca is a root vegetable that is widely used throughout the Caribbean. Also known as cassava, yucca can be used in soups, in stews, as a side dish or even enjoyed alone such as this recipe.

Yields: 6-8 servings
- 1 ½ lbs. yuca, peeled, halved and cut into chunks
- Juice from 1lime
- Mojo marinade.
- In a large pot add the yuca with enough water to cover the yuca. Include the lime juice and salt. Bring to a boil, reduce heat and cover until yucca is cooked. This should take about 30 minutes. Drain water
- Pour mojo marinade on yuca. Serve immediately.
